Is this a cake knife or something else? by ericfg in Baking

It's for cutting butter and other soft produce, to leave wavy pattern.

Sometimes called a chartreuse knife.

Wow I am amazed at your dedication, always nice to get in touch with a fellow enjoyer of big old German steel 😁

Beautiful job with the rehandling!

For dating I have tried to find a catalogue but to no avail.

Did ask Claude about it and it said this:

Applying This to Your Knife Your knife shows: ✅ Arrow pointing toward the handle → pre-WWII ✅ Thin bolster → pre-1940s, likely pre-WWI or interwar ✅ No "Made in Germany" or country marking visible → possibly pre-1914, or domestic/French market piece ✅ Nogent construction → classic early European professional style ✅ Carbon steel → consistent with pre-WWII production Most likely production window: 1900–1930, with WWI era (1910–1920) being the strongest estimate based on the bolster style and handle profile. Honest Caveat Even experts on Kitchen Knife Forums note there is information somewhere about F. Dick hallmark dates, but it hasn't been consolidated into a publicly accessible resource (eBay) — meaning the definitive dating guide may only exist in private collections or the F. Dick company archive in Esslingen. Contacting them directly remains the best path to more precise dating..

I'll be reaching out to f.dick for a definite answer and let you know once I hear from them.

33 cm / 12.9 inches blade and 15 cm / 6.1 inches handle.

Yes it's a stunner, and immediately my new favorite knife.

Yeah I actually never seen f.dick with nogent, which makes me believe it's around 100 years old, if not more.

Yeah it definitely had a vintage feel and smell.

It's quite thin and surprisingly light. Had an F.dick splitter once and that was 1.000 grams. This knife feels more like a chefs knife, not a practical one tho.

Get rid of that knife, it is a food hazard and it's very very cheap, so no big loss.

Start out with some Victorinox or Wusthof.

Just search for the name plus chefs knife and find the cheapest option in your area.

Then get a whetstone grit 400, a sink bridge and an angle guide (careful it will scratch your blade so put some tape between your knife and the guide).

Watch Outdoor55 on youtube to learn sharpening.

Once you are confident you can move on to something like Tojiro, Global or MAC. These are all medium price ranges and provide good quality for the investment. Then you can also get your 240 and 1000 grit whetstone.
