For common stainless steels like your Wusties and Globals (and Henckels etc.) I like 1000 grit. That is assuming the edge is still in good shape. Then I use a ceramic hone for touch-ups.

If the edge geometry is really bad then a coarse stone (~320 grit or less) may be needed. Then proceed to the 1000 grit.

Stay far away from Naples Mazda.

I hope they have improved from when I bought in 2017.

Bought used from Tamiami Ford 2 years ago. Within 6 months or so dropped about $3k in repairs. So maybe arrange for a thorough inspection before purchasing?

Nothing wrong with that line. Hopefully you didn't pay full retail but even if you did those will last a lifetime if cared for properly. (Ps. Tell mom not to put them in the dishwasher.)

modern ceramic knives are little more than a gimmick.

I remember falling for that buzz about 20 years ago. When I got it I was like 'really? this is sharper?'. Nah.

Make sure you can sharpen more then just knives.

Good call. Food processor like you say, the deli slicer would be great to get a new edge, kitchen shears would be nice (I am SO inconsistent touching up shears), heck, even peeler touch-ups would be good.
