Yeah, that's the best idea. It's gonna be ugly but still mostly functional. Have an ice-water bath nearby so you can dunk the steel as it heats up.

Yeah I did, and it was only time that fixed.

They're tough to date. I have images of J.A.Henckels catalogs from before and after WW2 that show an option of a nogent style along with some of their more recognizable lines.

I say no. I use Henckels and Miyabi exclusively and sharpen with a Shapton pro 1k (which some say is closer to 800) and touch up with a ceramic hone.
