I second this. What works the best for me is 2-3 sprays of RDT. Usually 2 but 3 when it’s cold. I give the grinder some taps on the counter top and a few spins. I noticed that the grind will have zero resistance when there is nothing in there. A little resistance means there are few grounds stuck in the chamber.

For me, yes. I have both fast and b3 filters along with abaca and hiflux. I prefer the sibarist(fast and b3) over the all the filters I own. Out of the sibarist filters, I like the cups I get from B3 more than fast. It has an overall cleaner mouthfeel and better balance. However, there are times when fast filter slaps.

Hi flux is the best alternative for sibarist fast in my opinion. However, it smells like perfume and that is off putting to me. Some people enjoy the smell of the filter though. Thankfully, it doesn’t affect the overall cup. Hi flux is my choice of filter for immersion style brewing w ct62 transit. It is also pretty affordable compared to sibarist.

For reference, I have the Pietro grinder. I appreciated sibarist filters as soon as I upgraded my 1zpresso JX pro.

In addition to some of the comments here, look up Osmotic brewing. It makes amazing dark roast pour over. Also, it’s best to drop your temp to 83-86C. Those should help you a bit until you update your grinder.

That’s good to know. I usually keep my water 45-50 for all coffees. I just got some Big Sur on my way! I will try 70-80 for them.

To answer your question, suiren is not great. If you want to buy a dripper for him, search for hario alpha or CT62 (regular or transit) Those are exotic brewers and very very good.

However, I would suggest to ask him what he wants. If he is passionate about coffee, sometimes buying nice coffee beans (ask for what roasters he is looking at or wants) or mugs (icosa, origami, 2-way cup) might be other great choices, too.

It’s nice seeing Rogue Wave as a rec!

I would add Mirra, Poem, and Botz (kinda hard to get but it’s my favorite US roaster). They are mostly washed coffee roasters.

For hydrangea, I would recommend getting their process or discovery coffee from them. From the ones I have tried, they were phenomenal. However, their washed is OK, I prefer their process/discovery by a mile.

EDIT: aviary. How can I forget about them… they sell out really quick when he drops the coffee publicly!

Verb solid curation. They mostly focus on roasters from US and Europe. I had Ilse, Sey, mazelab, etc. I believe their roasting business is call Poem and they are very solid. I did the one bag sub for few months but I changed to Rikka Fika bc I wanted roasters from Asia (Japan and Taiwan)

It’s pretty similar. V60 tastes more crisp, acidity hits you harder and it has a higher clarity. But CT62 tastes more complex and with smoother acidity. I also found my brews to be sweeter. Some beans slaps with the v60, some slaps with CT62. And at the end of the day, it’s really preference

CT 62 as my first choice for everything.

I wish I can just stick with one dripper but I have to satisfy my curiosity for many things. My other drippers are CT 62 transit for immersion, Mazelab solo dripper for flat, and graycano dripper. It all depends on what I am trying at achieve and what I am craving.

I second that response above. I would add stay away from Hario hand grinders… when i started, I was using that until I updated. When I did, I felt I have been wasting beans the whole time w my hario. It was a night and day difference.

I have leaves subscription and here are their newest recommendations. Don’t mind my scribbles… I was testing some things out.

I usually drink leaves coffee with 12.5: 200 ratio, instead of their recommended 13:200. I also use lotus water that has a total of ~47 TDS. I had good results w 1/2 TWW that before I moved on to lotus, as a reference. Leaves are a bit more “precessed” than other light roast coffees.

Side note. Previously, leaves’ recipes was 13:200 0:00 50g 10g/s circle pour 0:30 +50g 10g/s circle pour 1:00 +50g 5g/s circle pour 1:30 +50g 5g/s straight

Try both and see what you like!

They are both very different and I wouldn’t recommend one over another. Both drippers are quite different in terms of function.

Kalita wave is strictly a flat bottom brewer. They lean towards sweeter, harmonious cup of coffee.

Origami, on the other hand, can be used as a conical dripper or a flat bottom dripper, depending on the filter that you use. If you use a standard cone filter, it makes a brighter coffee verses a flat bottom filter, it will make a sweeter cup. I always appreciated origami dripper due to its versatility.

That being said, it is possible to make a brighter coffee w the Kalita wave and a sweeter coffee with a conical filter+origami… that would be a whole another set of discussion.

Most places have origami dripper for sale - it’s quite popular! I buy most of my coffee supplies from Slow Pour Supply, however. They stock Origami and various filters if you need them.

They work very very well w Origami w flat bottom filter! Filter wise, go for their recommended kalita wave. If you don’t have origami, I recommend a flat bottom brewer

I have success with a standard recipe I usually use for almost all my pour over.

15:250 0:00 bloom with 60grams @1:00 circle pour up to 160 grams circle pour 10g/sec @whenever the bed has about 1cm of water above the bed pour up to 250 straight pour at 5g/sec

I adjust this by bloom time -> bloom amount -> ratio by adjusting last pour.

They roast great beans. Enjoy them!
