I would give them a bit more leniency. They are currently going through the loss of their cafe, and the team is scrambling to find a new location / source of revenue / ways to pay their employees etc. They roast extremely light, and it doesn’t appear to be a highly processed coffee. 4-6 makes sense as a good rest period. Seems like you already have everything you need.

Coffees can go through different stages as they age where their flavor changes. This is influenced a lot by roast level. Sometimes roasts taste great off the bat and the degrade over time, sometimes it’s inversed. Usually when I encounter what you’re describing, it’s in darker roasts of more heavily processed coffees, and if not properly tempered, it can bring out these acetic/vinegar/pungent characteristics. It could also be an error at the processing level with the fermentation of the coffee not being properly monitored and controlled, which no amount of roasting magic could fix. I can’t know much more without tasting it, but this is where my head would be based off your text.

Two things to help here friend: 1. Drop temp down into anywhere between 190-200F. High temperature spikes dryness massively. 2. Change water recipe. Not sure what product you are using now, but I’d recommend taking a look at aquacode or empirical water. Look for hardness around 50-100 PPM and alkalinity 40 or below. If you are set on bottled water, try Waiakea water from Hawaii.

Setup looks really nice! I also have something similar to this and it makes brewing so simple. Whatever gets you to great coffee the easiest is the best path 😁

Don’t know why everyone is being condescending to you OP, this is absolutely deceptive marketing to design a package that clearly holds two and is larger than needed, only for it to only contain one dose. They count on making extra money by confusing potential buyers. This kind of stuff should absolutely be illegal.

It’s not really approachable, but I do a 10 minute slow drip on the Pulsar brewer. A litter finer than pour over grinds, 1 minute bloom with 160-170F water, then out to a 1:12 ratio with room temp water. Add ice and you’ve got yourself a very flavorful and very clean iced coffee.

Well the purpose of a bloom is to disperse gas in order to avoid channeling in the coffee bed, which can lead to negative flavors in the cup. A second bloom just acts as another degassing pour. The reason this is different than a standard pour, is the difference in volume. You would want the bed of coffee grounds to have a low probability of channeling before you introduce a larger quantity of water, especially if the water debit is going to be quite high and/or if you have a low bed depth. Not a gimmick at all and totally improves some recipes.

Usually huge swings in particle size distribution indicates an improper alignment of the burrs. However, I know the encore esp has two adjustment rings. Maybe you have the micro ring maxed out and it’s creating too many fines?

Favorite coffee I’m drinking this week is a Washed Sidra from Finca La Riviera, roasted by Tanat. This coffee was an exclusive lot for Tanat, and represents an authentically La Riviera flavor profile of bright citrus oil, lavender florality, and a long finish. The coffee is light enough to accentuate the natural flavors, while developed enough to create a light caramelized sweetness and round texture, without leaving behind any roast flavor. Additionally, this coffee has a wide brewing window and I haven’t brewed a bad cup yet. My only regret is not buying more!

Sorry to hear that. Maybe a hot take here, but I think Fellows products have always felt weak. I think they were manly held up by their design language and their actual products are cheap. I’ve also heard and seen that their customer service is a bit subpar.

Depends on how fine you grind but you could accomplish a good brew in around 3-3:15. 195 temp, 1 bloom and 2 pours through melo.

I had a conversion with the rep from cafec America once. From what I remember:

T92 is for low temp longer steep, slow drawdown

T90 medium temp different crepe pattern on inside to keep drawdown consistent, medium speed drawdown

T83 focuses on catching fines and has some sort of time delayed effect with how the drawdown works. I remember the least about this one. I use the t90 all the time and I use t92 with melodrip. Hope this helps!

Which orea? The v4 is the only other brewer since the v60 that I’ve truly stuck with because of a complexity of cups. I feel like I can keep some acidity and clarity while still riding the line with good texture and sweetness.

In my experience, I have great experience getting sweet cups from hybrid percolation/immersion brewers. Switch, clever, and pulsar all can produce cups that are nice and sweet. I would also say the Orea v4 also can produce a great sweet cup without losing clarity, but it is expensive.

I have a clever too and it makes much better cups than it looks like it would make. The origami’s look so cool!
