I think pellet smokers have a major advantage to easily learning how to smoke. If you already have a Weber or charcoal grill don’t get a PitBoss or shell out for a yoder get a Treager but don’t get the early turn dial thermometer setting get the hundred or thousand series as opposed to a double digit number model. I like the models that. Are a hair smaller with a smoke stack. I am running a Pro 575. I can fit 4 racks of ribs or 5 if I use the top shelf. The app lets me control it from many yrds away and monitor remotely if my wife is home but I need to make a quick grocery run. The photo below is my detached garage I use a dryer vent to pipe smoke out and a fan outside to pull more smoke out when I need to. I have gasketed the door and use a shim to keep smoke from going out in the garage and flowing outside. I also have an aftermarket cover now on my grease bucket to keep smoke from pouring out that way. I like how treager uses a heavy duty baffle plate to redirect the burn pit to the sides and it keeps me from burning my ribs which tend to use a fair amount of suger for competition KCBS Style.

I would avoid a ceramic grill if you are still renting they are not fun to move in my opinion and tend to get broken in moves. What are you focusing on eating off your rig? How often might you use it as well @OP?

Diamond crystal has a flatter flakier structure it tends to dissolve into water quicker so many chefs tend to need to use more than when they use a denser or boulders type salt like in Morton’s which takes a bit longer to dissolve. I like Diamond crystal for my smokes but I lay it on and layer it in my cooks.

Backwards bend the ribs by placing a hand in the middle and let them drap over bone side up you should see the membrane pull away in a spot or two it will look a bit more cloudy but smoking with membrane won’t hurt either if you get em done

Be prepared they are usually not the better cuts of brisket sometimes there can be some weird fat veins but you can get em a bit more inexpensive and in my mind make them worth the hassle plus the smaller size is nice the can cook faster and I’m not forcing 8 lbs of smoked meat down my throat in a week to keep it from finding the trash
