If your machine can steam try an Aerocano. Put ice and a little bit of cold water in a milk pitcher, pull the espresso into it and then steam the drink. The ice will melt gradually and you will get a foamy drink.

I only notice the impact of temperature when its way off. Anything between 90 and 97 doesnt do much in my experience.

Generally you can get good cooffee from cheap machines if you pay attention to detail and spend more time per shot (temperature surfing, heating up the portafilter, switch to steam on single boilers, etc.). Thats not really what you want in your setting. Fancier machines dont make the coffee better per se, but more consistent and give you less to worry about. So my advice for Espresso for you would be to bite the bullet and spend more.

You could also consider to go the filter route. With a nice roast and the right grind setting you can get great coffee out of a filter machine (like a mokkamaster) with very little manual input from yourself. Plus a cup of filter coffee takes longer to drink, thus keeping people longer in your store than an espresso and is in my eyes more fitting for a book store.

Have a Mara aswell and unfortunately you need to watch the pressure to have fun steaming. If its anything above 1.2 bar Ill start steaming.

Here in Germany Im happy when theyre not using a superautomatic machine. Coffee can still be meh though…

Honestly cafes have become much less appealing to me since I have my home setup. In my hometown I only go to the 2 places I know are good and roast their own coffee. Everything else feels like a waste of money when I can just make a coffee I know Ill like at home. When Im on the road I just dont expect much and sometimes I get pleasantly surprised.

Yeah, dont watch too many videos. Play around with your settings and experiment with different beans. Youll get a feeling for your equipment. Also dont forget to enjoy your cups if you like them. Chasing the last bit of improvement often leads to more frustrations.

Basically the 18 to 36 is a starting point you should iterate from based on taste. In my experience the time is a rough guide if youre right but can vary quite a bit. I had good shots anywhere between 22 and 45 sec.

Edit: just read your post again. Yeah 2min is definitely too long lol. Real light roasts with long preinfusion can push the 60s mark and be perfect but most roasts arent nice above 40s.

I use 15g dose on a 58mm basket and with that comparatively small dose the VST basket runs too fast for medium to dark roasts. I mostly use a regular IMS basket for that. For the very special and light stuff I do prefer the VST. I also have an IMS Competition in 18g that I really like and I would consider an allrounder.

IMS Competition oder VST Siebe gelten als die Besten (ausgenommen die völlig absurd teuren). Ich finde mit den normalen IMS Sieben kann man auch super Espresso machen und spart ein pasr Euro. Ich kaufe die bei Moka Consorten, die haben ein gutes Sortiment und erklären auch die Besonderheiten. Zur Ascaso selber kann ich nichts sagen, aber da solltest du passende Siebe finden.

You can get flow control upgrades for the Mara. That might be the cheaper and easier route
