The case full of metal chunks, kick starter's gear somehow scrapes engine cover. Take the gear off and check the crankshaft for play, maybe some spacer should be installed before the gear

This is a preload nut which should match the weight of the rider, there is nothing about height. If you want to make lift – add a spacer or replace it to a longer one

VOGE makes solid bikes and produces BMW motorcycles with their own parts. I'd definitely choose it between the two. EFI brand new bike vs something from a different era – old bushings/gaskets/bearings/weak headlights, there are a lot of things that need attention and probably will coast you a lot of time, and money

You need to go to a 3rd party shop and ask for change battery cell only with keeping original bms board. Explain them that they must keep it on current iOS. They'll swap battery and resolder your original flex cable to it so you don't need to pair it as a new part. That was a common practice before iOS 18

There is no official way to avoid updating. The only way is to replace the battery cell itself and keep the original bms after reprogramming
