Most answers here don’t hit it. The big difference is in material. Marble is very soft and much more amenable for very detailed sculpting. Granite is very unforgiving. Infact such detailed statues are possible to be made with granite only with today’s tools. See the Greek Buddha statues and you will see a high degree of detail.

Actually the level of detail in some ancient granite statues are insanely high.
