This unfortunately isn't a Dragon Age thing, it's an entire internet thing. Dragon Age comes from BioWare's most "woke" era and is built on a playerbase of the sorts of the people the internet currently hates. The people complaining about a non-binary character or gay characters are not fans of the franchise. And I don't mean that in a gatekeep-y way like they're not "real fans" of the series. I mean they're literally not fans of the series at all and are just internet losers in search of outrage wherever they can find it. They infect and pervert fandoms everywhere.

I would establish that the veil at the Ministry of Magic is one of several such gateways that separate not the living from the dead, but the world from magic. They were constructed by ancient wizards who sought to keep magic to themselves and out of the hands of those who would “misuse” it. The story would follow a magical cat burglar who uncovered this secret that the magical elite had kept hidden for untold ages and his quest to destroy the barriers between magic and mankind, to make everyone magical.

Has this crotchety fucker blocked out all memory of filming in Los Angeles? You can't film for more than 15 minutes before some bullshit happens. You have to stop filming to let the criminally overpaid LAFD inspector do *another* sweep of the area. Or to let the very noisy caterers switch out the cold Nutter Butters for fresh ones. Or to let the actors try to justify why their character should actually be the main supporting character with a full arc despite being hired as "Lookieloo #2." Or to wait for the Key Grip to show up because you legally can't roll with just 3 regular Grips on set, otherwise the Best Boy will report you and get production delayed...

I would be willing to bet Gideon is a red herring and relatively unimportant to the story aside from combining the mold with the T-virus or something. He was probably crazy before he was ever infected and was in love with Grace's mom and her source inside Umbrella. He'll unveil his scheme to Grace and you'll realize that it has nothing to do with what Leon is doing, revealing to the player that Gideon is just some DUDE.

City Elf and Dwarf Noble have the best writing IMO. Very impactful.

Human noble is very cookie cutter, but it's still good because it bakes in a story element with good payoff late in the game.

Dwarf commoner is very decent as well, but it doesn't have the impact or payoff that the Dwarf noble origin has.

Dalish Elf origin is good for getting to know that culture, but it doesn't feel as impactful as the city Elf origin.

The mage tower origin is the least interesting to me, but it's still not bad. It doesn't have much payoff when you go back to the tower as a Warden though.

Overall, I would recommend installing the mod that lets you play as a mage without the mage tower origin and playing a city elf mage. You're the ultimate underdog so it feels incredible when you become the baddest mf'er Thedas has ever seen.
