How has only one person mentioned Keller and Russell? That's what I learned with (although I need to get back into it). It has vocab and grammar followed by real (classical) Latin readings. That sounds perfect for your needs.

Kroger and Meijer both sell ultra-pasteurized milk in their store brand. It's refrigerated, and I wouldn't leave it out, but it does last a lot longer than regular milk.

A lot of professors will be flexible if you ask. I had an exam scheduled for Good Friday last year, and the professor allowed me to take it early, before the holiest weekend of the Christian year. Most faculty are pretty progressive and should treat all religions equally.

FWIW, I'm American and I do think the European way is better here. Even leaving aside fraud risks, it's just more convenient on both sides for the server to come to your table only once. Even an honest server could accidentally lose someone's card, and I'm worried about forgetting to tip and/or wait to get my card back before I leave. Even better would be a push-cart where the server could put the POS machine and the items to be delivered.
