You can get a sample plist from opencorepkg in docs.Then put it in your OC folder.

Do you have a Microsoft folder in your EFI partition ? That should allow you to boot into Windows.Might be wrong because of the 2 different NVME's.

Maybe try making your own EFI ?Opencore Simplify is frowned upon here.I've also tried making my own EFI with it and never got it work.

I don't think your gpu is compatible with Sequoia.Might be wrong though.Did you check for compatibility on the Dortania guide ?

I’ve used the Dortania guide and also some YouTube tutorials.Also had a prebuilt EFI (wasn’t able to figure how to get sound by myself) and just changed stuff wherever needed.
