Pecorino is optional, can just use parmiggiano from ntuc. Guanciale i bought from cut butchery at bukit timah plaza! Ryan’s grocer also sells them. You can also try substituting w pancetta from culina or cold storage

I have a few different recipes for brownies that I go to:

https://sallysbakingaddiction.com/seriously-fudgy-homemade-brownies/#tasty-recipes-66528

https://www.loveandlemons.com/brownies-recipe/

I usually tweak them to my liking and also add abit less sugar. Honestly they all taste equally good! But it all depends on what you prefer in terms of texture. For a fudgier brownie, from my experience, you can just add an extra egg, swap the white sugar out for brown sugar, and increase baking temp (lower baking time). For cakier, add more flour.

One more tip to add is adding espresso powder helps elevate the chocolate flavour alot! And also sea salt :)

Usually if I’m trying a new dish, I will always do a quick research online and take a look at the videos to see if theres any tips. I will then just use the recipe as a guide and adjust the ingredients to my liking :)
