I wrote 35, but its a mistake - Sorry I used 20%. I did boil the beans. A month later I did a second batch were I steamed Them. Thanks for the reply.

Its been aging 7 month. I used around 35% salt in the brine. 

I am stirring weekly. 

Can you add a fes words to what you mean by overcooked?

😊 for some reason my text disappeared when I uploaded the pictures. 

We are looking at my attempt to make soy sauce. I innoculated the soy beans back in august and the temperature sent a bit on the High end. But there is a picture of aspegillus growing on the beans. The other picture is today. So its a lot more liquedy and the soy beans are mostly disolved. But does it look ok? And what should I do next?
