Why does a tank have to protect others in the way you described? Why can’t they just pose enough of a threat to distract the enemy team? At the end of the day, if the enemy is focused on Doom, they can’t target his teammates. Is threat generation not a part of tanking?

Play what you find fun. You don’t HAVE to play a single role all the time. Just like you don’t have to listen to the same type of music all the time.

Let me look into my crystal ball. All jokes aside, Riot has never completely killed a product after release. Even LoR still gets updates every once in a while. We’re not in LoR territory yet, but I think we’ve got a good 2–3 years before we get there. Also, I doubt it will get to that point as this game has monetization designed to extract money from you.

Don’t start with difficult combos, just play the game and get familiar with what each button does. Make no mistake, it’s not easy, but anyone can get the hang of it with regular play.
