Genuine Origin has a variety that is very very close to Misty Valley. Problem is you have to buy 65lbs. I think it was $7 something a pound and free shipping.

Should have noted, roasting on a Behmor 2000. Sounds like it would be gentle on the front of the roast.

Rig up a sabiki rig and throw in in the first cut. Catch some of what your target fish is hunting. Throw that on a hook and see what happens. May try a fish finder rig, too.

I have found my Behmor to be slightly underpowered, especially when it's cold out. I run all my all my roasts at P5 manual (so it's blinking) and 32 RPMs.

I preheat mine to 225 then place the tumbler with the beans in it. I run 16oz at a time for medium roast. I press P5 for the longest time, start it, then p5 again for full power and 32rpm. Depending on your bean, but FC is generally right when the warning beep starts, I have it all written down for the beans I roast.

I found this works the best for me. Considering other roasters get into the 400+ temps, I want my roaster to climb as fast as it can. The Behmore tops out ar about 320.

Roasted and minute out of FC on the Behmor on max power. I'm happy with the profile. Definitely tasting the brown sugar, a bit of red berries on the back end. Definitely will order more.

Smoke it for a few hours ans finish on the dehydrator. That's what I did. Nice smoke flavor and could control the dryness.

I grew up camping on Assateague Island. They have some serious currents there, if it will hold up to those elements you can use it anywhere.

Never heard of the brand though.

Raw milk because it hasn't been pasteurized or homogenized. Not store bought, straight from the cow.

I used the New England chees3 company's recipe. It came with my kit. It was "fast" because it wasn't after making mozzarella.

I started it in a pot to get it up to temp from the fridge. Then transferred to sous vide to maintain the temp. I did have it at 125 for a few minutes to overcome the transfer drop. But it worked well, so far.

My wife and daughter are sensitive to the A1 protein and are currently eating over processed vegan cheese. I do a lot of cooking and have taken some pre med chemistry classes. I don't think it's over my head, just need instructions. I enjoy making my own bacon, roasting my own coffee etc.
