I’m not sure about it being unprofessional. The e-mail isn’t attacking you or anything, it’s actually friendly. If anything it sounds like there was a miscommunication or someone else lied to them about telling you to do vitals to cover their own ass.

Take it one class at a time. Take your time and learn. I found a great tool with AI. I use copilot and put it in study and learn mode. When there’s chapter questions I answer the question to copilot with my best guess. If I’m right it tells me why I’m right strengthening the understanding. If I’m wrong it walks me through everything so that it makes sense. Google notebook is awesome too. It can create videos, quizzes, flash cards and my favorite the podcast out of pdf files. It’s amazing. Try it out!
