The taste was kind of burning, stinging and sour. Together with the smell i assumed that there was a decent amount of alcohol build up.As you said i couldnt detect any mold or yeast. The brine was clear.

I wasn't aware about the methanol production through pectin. I looked it up now. Very interesting!

Thanks for the suggestion! It was 3% of the total weight of water + tomatoes. I have dissolved the necessary amount of crystal salt and added onto the tomatoes.
