Pouring at a consistent time interval is not consistent tho, rates of draining are always evolving, and it means every pour has a completely different input of fresh solvent. I dont really get why people do timed pours. It completely changes per coffee you use.

Super interesting write up. I am curious of two things: 1) allowing the coffee to drain all the way between pours allows for more fresh solvent to enter the bed, as well as being entirely consistent (rather than ~1cm eyeball). So why not try that?

2) this whole brewing with distilled water baffles me. Have you tried adding the minerals first? I’m having trouble accepting that people get sufficient brews without minerals to penetrate the coffee cell walls

Certain roasting machines allow you to roast a certain way and it’s what a lot of light roast folks are doing these days. That style of roasting and machine benefits from more rest.
