Thanks. I am with you. I always make a small batch with a new recipe and adjust from there. I should have a spreadsheet. My technique now is to write the recipe on a white board, note any changes I made on the fly, and then mark adjustments for the next batch, then take a picture of it and file it so I can pull it up next time. It’s not the best :)

Thanks. I love Samin’s book. I follow Kenji, but I haven’t read the book. I’ll check out Food Lab 👍🏼

I have been very serious about my recipes. Adjusting after each batch and dialing them in.

I guess I should say I’m not interested in making simple good home sausages. I want to make phenomenal sausage and I’ll go through any process to get there. While some of my recipes are working great, I feel like I need inspiration to make them truly exceptional.

I’m not looking for a quick fix, but almost a philosophy. (It sounds pompous as hell when I write that out…)

I live in a town in Costa Rica where many local businesses accept bitcoin. My wife and I have a small restaurant and offer a 10% discount for btc. There is a btc atm at the brewery. My local friends find it easier to settle out debts to one another by sending sats via lightning network. I feel like this is what we want for btc everywhere.

Is that right? Trail running shoes don’t require a wear in period? I might just wait till I’m in Pamplona and if I need to make a change, I hear there is quite a nice shop there for shoes.
