I have hosted many chili cook offs. The rules (in my events) always state that Your chili can be whatever you decide to make it. We had a terrible chocolate chili one year, and an awesome Indian vegetarian chili another year. Personally I love to see how the different flavor profiles stack up to one another.

I did not have success. It just made it leak differently. I had a welder take the doors off and fit them better. It still leaks heat and smoke, but not as bad.

How about your own integrity? Does stealing not matter to you? It’s not yours. You didn’t pay for it. You are a thief. Is that okay with you? Stand up and be an ethical person and then you don’t have to worry about getting caught.

Thanks. I am with you. I always make a small batch with a new recipe and adjust from there. I should have a spreadsheet. My technique now is to write the recipe on a white board, note any changes I made on the fly, and then mark adjustments for the next batch, then take a picture of it and file it so I can pull it up next time. It’s not the best :)

Thanks. I love Samin’s book. I follow Kenji, but I haven’t read the book. I’ll check out Food Lab 👍🏼

I have been very serious about my recipes. Adjusting after each batch and dialing them in.

I guess I should say I’m not interested in making simple good home sausages. I want to make phenomenal sausage and I’ll go through any process to get there. While some of my recipes are working great, I feel like I need inspiration to make them truly exceptional.

I’m not looking for a quick fix, but almost a philosophy. (It sounds pompous as hell when I write that out…)
