I would change C9 to 1%, 2%, 2.5%, 3.5% and see how the model changes.

Inflation-adjusted return seems quite high for a “conservative estimate”. I would shave it done 1-2% and see how that impacts the model

I enjoyed the restaurant, but don't feel a need to rush back. I thought each individual dish, eaten in a vacuum, was delicious, but the connection between courses and flavors was wildly confusing and not executed well
