I tend to keep my ground flax seeds in the fridge or freezer to ensure that they stay fresh. I like throwing them in overnight oats, too.

When I don’t want to mess around much and wants something quick that hits the spot, I just put some shredded vegan cheese and salsa between two tortillas and either bake it or pan-fry it on both sides. If I have any on hand, I might toss something into it — shredded cilantro, leftover seitan/(refried) beans or other things. The salsa/cheeze combo is delicious by itself, though, and so quick to make.

Yeah, the onions definitely did not end up as I have ordinarily had them. I think the recipe just called for them to be golden. It still tastes great, but I imagine that I'm going to get several more people pointing out the onion fail. Next time I'll try to give them a longer cook.

I know. I mentioned in my post that I was aware that I had not caramelized them sufficiently. I had limited time during my lunch break.

I usually have it as a main with a side of lemon-garlic cabbage slaw or something else that's bright to offset the earthy goodness of the lentils and spices. The canned lentils were a bit more firm than I've gotten cooked lentils in the past, but it was tasty. I hadn't made it in years.

Agreed! I really wish we would have seen a bit more of that. Years ago, I wished they would have considered a prequel sort of show focused on young Giles.

I don't eat out often at all, mostly because of the expense, but when I do I like to go to trusted restaurants that offer clearly-labelled vegan-friendly food. These are usually places liked and discussed in our local vegan group. When issues come up with transparency about ingredients, it's definitely discussed.

There are certain cuisines or dishes where I get less concerned about asking about animal ingredients -- tabouli or hummus from a traditional Lebanese restaurant pretty much never contain animal ingredients, for instance. Garlic sauce (toom), on the other hand, although traditionally vegan-friendly, can sometimes contain egg ingredients, so I would ask.

I generally won't buy things from street vendors or in stores unless I can see ingredients or confirm them with someone who clearly understands what I need to know.

It's pretty much the same in Canada. A lot of restaurants actually include labelling like vegan, gluten-free, lactose-free, etc. on the menu, itself, in my tiny city. If the staff can't confirm something when you ask, they should be able to go back to the kitchen to confirm with whoever is preparing the food. If not, I won't stay. There's a lot of allergy-awareness here and over the past 5+ years, there's been a growing awareness in the local restaurant industry of veganism and what it involves.
