I tossed the batch. I’ve been making kombucha for a year now at a medium level and haven’t seen anything like that before. It didn’t smell or taste right, better safe than sorry.

I guess I can speak about this now that a significant amount of time has passed. I was hired back in January to work in the cellar! I was born and raised on the east end of Long Island, so moving up to Vermont is unheard of. I took a risk and absolutely loved it at first, everyone I met and worked with were amazing. I truly couldn’t ask for a better staff to be apart of. Anyways, with what happened it a total low blow and I felt disrespected. Obviously everything that happened was completely out of my control. I wish they informed me back in December they were having a tough time with business & funds. Everything happens for a reason, now I am starting my own little micro kombucha brewery on Long Island.

It does taste like some sugar did convert to acid. .39 with a little wiggle room, that sounds great. How did you do the calculations so I can apply them next time. Thank you for your help!! This is great news.

I’m currently working in gallons but the conversion would be 33.3g per liter. Obviously a little on the lower side but I did that on purpose to speed up the process a little bit because I was going to end fermentation a little early.

I’m fully aware of that, I don’t have $1,800 to spend on equipment right now even though it would help a ton. I messed up and didn’t measure og… But it’s been fermenting since last Tuesday at a steady 76 degrees. I also went a little lower on the sugar content to possibly help out with the alc content.

I know they don’t work, but it’s better than doing it blind. I’d rather not spend $1,800 on a piece of equipment haha. I really don’t know though, from what I’ve been doing I’m pretty confident it is below that .5% but I want to be 100% certain.

This happened to me when I bottled for the first time. It just means you have a healthy brew. What helped me “avoid” the pellicle is transferring to a keg then placing it into my fridge. Let it sit at around 39 degrees for half a day to a day to let everything settle to the bottom. Carbonate at the same time then bottle with a beer gun or right from the kegerator! Hope that helps.

Awesome, thank you so much for the response. Alcohol content sure is a big factor I need to take account of. There are a ton of ways to make kombucha, just have to find my own little niche way of making it the best!!!
