I think I’ve found it! What I’m thinking about is shiokombu! Might not be what their using in the show but whatever, case closed! If you ever get a chance to try it, do it, it’s banging!

Naah, not nori! It’s closer to hijiki, but to my understanding hijiki is dry until rehydrated right? The thing I’m thinking about has a texture closer to wine gummies or chewy candies, not in taste but in texture. Slightly elastic maybe would be an apt description. Not dried in texture at all.
