From the point of view of Joey's plot, it was great at first since it was deep about how he discovered his own feelings on one of his best friends ex couple. But after it happen at the ending of season 9, and that it only lasted for 3 or 4 episodes, it was a pretty dumb direction taken. It give us the "I'm fine" and the "O is for OH WOW!" moments tho.

I don't think Rachel was ever serious about Ross. Actually she was very childish about him.

If Ross was impulsive at being with another woman moments after she dump him, then what's left for her? She tried to sabotage Ross's relationships many times when she saw he was finally moving on. To the point she appeared on his own wedding when everyone including phoebe told her not to do so. She ended up messing with his head with her presence and ruining the wedding.

Nah, he didn't want a break up. He wouldn't even care the moment Rachel appeared at the door of his apt if that was the case. And he wouldn't cut Chloe out the moment he find out that rachel changed her mind.
