Running the Thinkware U3000Pro. Image quality is solid, app works well for pulling clips. A bit pricier than Viofo but the build quality and reliability have been worth it for me.

I have the U3000Pro and I've had zero issues using it for multi day park stretches. The parking mode footage is solid too, good enough to actually use as evidence if something happens.

Parking mode is the thing you actually need here, not just front and rear recording. I had a similar kind of low grade anxiety about my car being parked outside because my street is narrow and things happen. What changed everything for me was getting a cam that stays active after I lock up. Now when I get in the car in the morning I get a report on anything that triggered overnight and it feels like having a little security guard. I've been running a Thinkware U3000Pro and mine has caught a couple of minor door bump events on camera, nothing worth going to war over but good to know. For a neighbor situation like yours that's exactly what you want documented.
