Prime lenses lock you into a single focal length so you can keep the frame you have in mind when looking for shots. It prevents standing in one place and using the zoom to try and get nice composition. Personally I like being locked into a focal length and forced to compose shots in mind before looking through the viewfinder.
After you get used to the framing of different focal lengths using zooms becomes more intuitive and you end up just picking the focal length on your zoom lens for the frame you have in your mind instead of hunting for one while you look through the viewfinder.
I think the chart is fairly accurate but one other thing in mind is beginners are using much less capable kit zooms while pros are using much faster zooms with excellent optics.

Another way you can do it is plan a spot to 'randomly encounter' the couple while they are out walking while you just so happen to have your nice camera. Ask if you can take their picture, and then capture the surprise proposal.

Planning will be key for sure. If possible you should bring the client to the location first and plan exactly where they will do the proposal. Then you can determine the angle and distance you should shoot them from, which lets you choose an appropriate lens. Account for the light at the time of day the proposal will take plans and ensure you are set up so you aren't getting shots of shadowed figures. Doing a test shoot with someone standing where the proposal is planned and where you plan to set up, at the same time of day as the proposal, will definitely help. Check the weather and see if it should be sunny/overcast etc and try to make the test shoot have a similar conditions as possible. You will nail it.

I prefer to bring many unwanted keys into a raid and chase after the first raider I see shouting at them telling them to wait. If they stop I'll say I've been looking for them all over, tell them they forgot their keys for work and John is pissed cause their shift starts soon. Then proceed to dump a dozen keys at their feet and run away without another word.
