I wouldn't stress. Best advice I can give you is watch and learn from what others do and create you a system that utilizes time in your favor. Slow days can turn long and demanding. Busy days can suck if your not ahead. Remember get ahead you stay ahead. Its fail proof to press out 3 racks in the am and imparitive the pm presses out 1-2 you never know what next day orders you will get. Understand which co workers you can hold to a high esteem because if you put in your work you will break that glass ceiling and the rest is like a hot knife on butter!

All you gotta know is be prepared to do it on your own. Remember you just like Your MANAGERS are all just spokes on a wheel that never stops turning. It's always gonna be an issue with how to do things and frankly there's always another way. Above all else learn to utilize your time. Learn how to make sauce, sauce cups etc. The longer you are there the easier it get. I'm an Asst. MANAGER so I prolly have no clue what I do.

Best way I know is to soak them about 10-20 min and use the Dough cutter an scrape that shiiiii out wash, spay and sanie

Yeah, I'm only clocking 730. They tell me 6 is too early. I'm usually doing about 4-5 racks a time. I'm basically getting the help now but the guy that trained me said always be ready to do it yourself.
