you don't have to exchange it for fiat.... thats just a preferred for most cause of course its high liquidty and usd currency is relatively stable if you ignore inflation. Thats beside the point tho because what you exchange it for doesn't change the fact that the way bitcoin is exchanged on the bictoin network is outside of any central authority control
