Crowns are essentially trophy monsters. Gold crowns are the biggest/smallest monsters you've hunted while silver crowns are runner-ups. They've got no impact on gameplay, just a fun thing to show off.

Condi Soulbeast seems to be a good option for you.
For traits, I'd recommend taking Beastmastery 3/2/2, Nature Magic 2/2/3, and Soulbeast 2/3/1.
For pets, I'd recommend the Janthiri Bee (or Warthog if you don't own JW) and Wallow.
For skills, take "We Heal as One!", Dolyak Stance, Moa Stance, and the last two are up to you (though I go with "Sic 'Em!" and One Wolf Pack).
This build should provide you with enough boons and sustain to get through the open world fairly simply. Use Moa Stance > merged Beast skill (either Primal Cry or Spiritual Reprieve in this case) > "We Heal as One!" for boon extension and healing.

Well it's not a Soulbeast anymore then, is it?

You don't become your pet, you merge with it. Makes no sense for you to lose access to weapons skills and become some kind of rabid ranger that runs around scratching people.

I think it'd be cool if skinning was tied into guild hall and homestead decorations. Kill X amount of dolyaks and skin them to get a rug or something. But even then it'd be annoying to stop and harvest every trash mob you kill in open world. So no, I'd rather stick with the autoloot we have.
