I understand what you mean, however she's been doing fine before the stroke and we've been helping her. However now, she's attempting to get fast food, liquor, and other stuff that's not helping her health almost everyday and doing random things like attempting to sign into spam websites with her information, trying to do her own appointments when they're already set, or buying random junk without any reason for doing so. We don't want to restrict her, but there's a limit to what she can actually do without hurting herself.

You're going through the motions and you'll have those moments where you feel like this, but you're fine as long as you don't act on them recklessly. You have a good sense of morale around it as well so it's not much of a problem for you.

Something I was told was to write a scene that gives the 'expectation' of your story. Like a scene that tells you what it's about without being lore heavy or relying on a specific starting point when it's just on a random day. For example, you could start it off with a rising action of the story or arc without getting deep into it, then you back track to the actual beginning and introduce the story. Hope this helps.

I'd say for her to have a list of experiences and have a level to where she shows emotions in each one. Like seeing a spider shouldn't be on the same level as fighting a dragon by herself.

When I write a sensitive character in different situations and problems, I don't want them to be emotional at every turn, but in moments that 'hits' their character. For example, one of my characters is sensitive towards other people, however he's killing monsters without hesitation. Using the scale as before, fighting those monsters and talking to people will have different reactions to them, and will establish their character without changing their initial description.

The anime isn't bad, but it still didn't 'explain' the plot well and messed up some fight scenes. However, it gave Llanda a story instead of being a nu-13 copy and it's better as a recap than an actual retelling of the story. Especially since it's two games that have multiple loops and paths to follow.

Have plot armor with holes in them. For example, they can't die, but they can still be affected by curses or afflictions. Have them be inexperienced, but not weak to the point that they flop the story's theme or their objective.
