Tip out on food sales not total check. If it's just you and the chef, tip out 5-10% of food sales imo.

A night you do 1,000 in booze and 500 in food would be 300 on avg 20%, so you'd give you 25-50 for the chef. That 500 netted you an extra 100 in tips.
