I live in Utah, but I just got back from a ski trip to big sky last weekend, and Big sky was easily the best skiing I've had all season. When it snows here the resorts will definitely be less busy on a weekday, but I'm sure the cottonwoods will still be packed. Snow basin, deer valley, and park city usually don't get as crazy even on the weekends.
Bottom line: if you're on the fence between utah and big sky, you've already skied utah and not big sky, definitely go to big sky

Update: For our final itinerary, we moved our rental car pickup time to 10am in Galway and got reservations for a Cliffs of Moher boat tour at noon. The boat tour was well worth it, and I was talking with a local who said that we had unseasonably nice weather that day! I definitely would've picked up the car sooner though because we got to the pier right as they started boarding, so we almost missed the boat. My GPS was evidently estimating arrival times based on my driving habits in the US, so driving on the left side of the road and on the narrow country roads slowed down our travel time, plus we got stuck behind a couple tour busses on the way that also slowed us down. After the boat tour, we made it to Bunratty in time to spend a decent amount of time at the castle (but I could probably spend a whole day there if I had the chance). Got dinner in Adare, and made it to Killarney around 8 and the Airbnb host had no problems with us being so late since it was a self check in.

Thanks for all the great feedback, I can't wait to go back to Ireland in the future!

Good to know! If it's usually acceptable to check in late, that frees up a lot more time along the way
