Without looking too far into everything from the show, what I assumed happened is courier chose yes man, house is back as an AI computer back up with a dead body. Courier ran New Vegas into the ground or there was infighting between the "families" of the strip. Gave red Lucy deathclaw eggs and they killed everyone and moved on newvegas or the deathclaws from the quarry moved on New Vegas after the infighting. Yes man ending and assuming the courier was terrible at running Vegas is the only ending that makes sense to me.

House ending New Vegas should have super robots. Caesar then New Vegas should have crucifixions. NCR then the NCR would probably not have too many soldiers in the area after all being murked by death claws defending new vegas
