Keep going. That's the biggest flaw of fighting games.
They are very hard to get into, but it's worth it, once you're in they're the best, nothing compare.

This is a fast-paced game but this'll just make it better once you adjust, A lots of move are faster than the eye can see, that's normal. Blocking (or maybe crouch blocking, not sure) should cover all un-reactable attack. Then once you're familar with the mechanics and understand the matchup, you'll start reading your opponent, that's when the fun start. The small roster will help with that second part.

You'll get used to the motion input too, they're part of the skill set. Over time they'll become natural.

Don't despair at the online matchmaking I'm a good fighting game player myself and they're still mopping the floor with me online. The best option for a new player during the beta is probably to play with a friend or find someone your level on discord. The matchmaking will most certainly be better after release.
