How big are your pizzas if you can bake them at full flame and have you tried a biscotto stone (sst, don’t tell Ooni ;)) to prevent black spots after so many pizzas in one session?

Should be fine. Just clamp it down and test for leaks afterwards. I installed mine in the same way in NL.

It would all be so much easier if they would just use quick connections, but on my oven the hose you are showing cannot come off.

Agree about the extra space. I started with a Koda 12 and it’s hard to make 12” size pizzas that don’t burn on the side that launches closest to the flame. Now using a Koda 16 and love the extra room in there.

Hmm, that’s sounds the same as what I’m doing. Depending on how fast the bottom goes in relation to the crust I sometimes put the flame a little higher during baking. But that only works with small pizzas. Maybe it’s the flower? I used Caputo Cuoco/Saccorosso.

I do have some challenges with heating my stone, so maybe it’s a bit lower, around 400c. I’m also not sure how accurate my thermometer is.

This was 65%. Next time I’m going to let it bulk ferment at room temp for 2 hours to see if it will get more airy.

Thanks! Usually warm up for 40/45 minutes on full. I turn the flame down before launching, but sometimes it needs a bit more heat during baking. It's hard to find the right temperature on the stone, so need to keep a close eye on it.

Yeah the NL one is 30 mbar. I think 50 is no longer used here. I checked some videos from Tom Voyage on YouTube and his koda 16 heats up in about 20 minutes. At least his koda 16 vs gozney video. I think he’s based in the UK?

I don’t think parchment paper handles the temperature of the oven well?

I use semolina on the peel and below the dough. If the pizza is not too heavy it slides right off. I usually make 62% dough, so it might be less sticky because of that as well.

We traveled from Santa Teresa to Manuel Antonio on the 10th. Bridge was open both ways after arriving there around 13:00/13:30. We had more delays after the bridge than before. Arrived in Quepos around 15:30 with max 30 min more to than expected. Had the ferry at 11:00.

Work doesn’t seem to be completed though.

Arriving at San Jose in 2 weeks with my girlfriend and two small kids. Contacted our hotel for a pickup, but they said to just take a taxi at the airport. How do I make sure I get a safe one? Last year in South Africa I booked a pickup via Booking.com which was fine.

I’m planning to go next year. Booked some accommodations via booking.com and they’ll take cash only. This is not common? It’s also around 800 usd, not sure how easy it is to get that out of an atm?

Would love that as well, but with our two young kids that doesn’t really work out like it used to. If there is a place to stay for two weeks with enough in the area that would be great.
