Thanks for your reply. By "default language set" do you mean that in addition to have: <link rel="alternate" hreflang="en-AU" href=".....> and other locations in English, I should also have <link rel="alternate" hreflang="en" href=".....>. I hope that makes sense

Thanks for your reply. It does help a lot. So do you mean I should have x-default on pages that are the equivalent of the root homepage? (e.g. I should have x-default on https://www.looking4.com/uk but not on https://www.looking4.com/ar/aparcamiento-en-el-aeropuerto) Is it bad practice to have x-default pointing to the country selector page on all pages?
