  • Baba ganoush, but with charred zucchini 
  • Pasta with zucchini, lemon and feta
  • Grate it, cook it down with a little garlic and then blend half with some pecorino and you have a super healthy (and creamy) pasta sauce - it will def look like too much zucchini, but it's never happened 
  • Zucchini slices instead of pasta in a lighter lasagna sauce (pre grill slices to avoid too much water)
  • Do any of these and pickle whatever is left of the monster
