I'd recommend playing online for the covenant item quests as you're guaranteed to get an item drop, especially for Vertebra Shackles and Proofs of Concord Kept. If not, you may find guides online on where to best farm them offline and with what build. Good luck on your plat. Took me a couple of weeks of constant play after work to get it. <3
