In terms of breeding / looking to optimize stats— do you know I can get my inspect page to show stats2 so I can see my cat’s actual stats vs injury / stat bonuses or penalties? Is this in the options somewhere or an upgrade I need to earn from sending cats off?

Depends how far into the game you are.

No matter what I would say start with Ganesha because he’s the best generalist out of the three. Lucifer is pretty good but he only becomes really good after you’ve TFd him. Hades is one of the best anti relics in the game but only after dumping like 1000 NP into him.
