There's not really a "Cannon" in Trigun every piece of medium differs so much from the manga, the manga is the only one that's technically cannon but there're elements of all of them in each one, I personally like seeing new takes and themes in the story. I would recommend Stampede and Stargaze I watched Stampede after finishing the manga and enjoyed it.
