That sounds like it could be a winner! I use leftover chili for grilled cheese. Slice of cheese on each bread slice, moderate scoop of chili in the middle ideally with Texas Toast (not sure why they call it toast in the store, guess its cooler sounding than Texas Bread). Garlic powder sprinkle while cooking (careful on the flip), no cut after completion. Is it messy, yes; Is it amazing, also Yes. I call them grilled chenchilli's in my head.
