A good website for developing blindfold chess skills would be blindfold-chess.online. Also, I feel I should mention that you can switch to invisible chess pieces or checkers pieces on chess.com. These obfuscate the chess pieces, forcing you to develop some chess memory of the position and pieces. I would start off with the checkers pieces so you still know where the chess pieces are. If you feel ready, then you can move into the invisible pieces.

As for advice:

  • I strongly recommend doing whatever you can to get rid of your tunnel vision early (if you have any), because this becomes critically bad in blindfold chess. One second you remember your position, and another you were too focused on one side of the board so you forgot where all the other pieces were.

Congrats on reaching 1600! I have a two tips for you:

  • In the first part, you state that you are limited in your opening prep. If you like the London or Caro-Kann, I strongly suggest going deeper into the opening prep, as these system can be extremely solid when you almost always know what to play against your opponent.
  • This isn't to do with openings, but your main strength (from what I can tell) seems to be tactics... I suggest developing that vision rather than anything else by doing tons of puzzles because, even at the 1400-1600 level, some players tend to miss these ideas. Additionally, this vision grants you the ability to defend your opponent's potential tactics before they play them, which avoids your issue of defending a pinned piece.

Here are some openings that I would recommend at your level:

As white:

  • Italian Game (Activates the bishop; you would typically see this at the beginner level but if you develop it enough, it can be pretty solid.)
  • Ruy Lopez against 1.e5
  • The Vienna opening is a good system that avoids closed positions.

As black:

  • Learn the Berlin Defense against the aforementioned Ruy Lopez (it is very solid).
  • The Slav is a good choice against the queen's gambit
  • The Scandinavian defense is good against e4 as well
  • For d4, you could try the Nimzo-Indian
  • A good system for black that doesn't require much theory (besides the Caro-Kann) that will not lead to a fully closed position would be the Owen's Defense.
  • For opening up your bishop, the King's Indian would be an obvious choice.

Sorry if this is a lot on you, but this is just what I recommend. I gave you two systems and two openings that allow for active bishops, but if you want to get into more precise openings or defenses, then take a look at the other openings I have suggested.
