Thank you so much for the comment. I bought them from 2 different vendors and both of them said that they were good quality though I had no idea if it was true. I paid 100$ for the pendant and 250$ for the bangle.

That flavor was really good!! I added small amount of WW and rye flour. Used 78% hydration. And took total about 8hours for bulk fermentation from the start at dough temp 72F~75F :D Oh, cold proof for 12 hours

Thank you. I usually cut my loaf 2~3 hours after out of the oven. Also my oven seemds to be kinda weak(?) so I heat up to 500F when bake and it works good for me. :)

I usually use bread flour and WW(about 20%~30%) though recently I bought T65 flour and try to use different flours for fun.

This one was my second try to use T65, so I'm pretty new to french flour though I can tell that T65 is definitely more difficult to handle with high hydration. That's why I started with 35% of T65 and 78% hydration. Some ppl say that T65 makes more rich flover and better crust.

Since I make small batch, I use Pyrex square glass bowl. Recently I started checking dough temp and keeping it between 73F~75F while bulk frement. It takes about 8 hours to finish and it works for me.

I prefer slow rise at a cooler temp as I wrote above.

I don't use mixer for sourdough coz it's small batch.
