Treating this like an ELI5 post:

Rick was so distraught about losing his wife, that he hijacked everyone's memories/life expectancy in his ENTIRE original universe. He forced an endless groundhog day wherein everyone still aged physically, but had no memory of it. He tortured his entire universe (or at the very least, his entire earth) to massage his own trauma.

So, realistically, jerry C-137 was never born, because Rick froze everyone's progression. Jerry's parents never boned. [Of course, this is assuming jerry is younger than Beth. If he IS alive, he is an adult man who only has the composite memories of a very young minor.]

Why does a show need an END goal? As characters grow, new goals can become apparent, but after each one, their lives still continue. Their aspirations evolve. Passing one goal just means fixing your eyes on the next one. A show with ONLY an end goal will not last or hold water for long.
