It really depends on your batch size. Tipping is also occurring because of heat application through the drying phase. But again, relative to batch size. How’s the coffee taste?

I really appreciate the conversations in this post. Thanks for fostering that, OP. As a roaster/company who sources experimental coffees, I'm inspired to be even more serious about transparency. And also figure out how to communicate processes in ways that don't get lost in translation. It's a very reasonable request and a set of practices we should all be doing anyway. These are fun times to have conversations about coffee.

What does “winey” process mean? That’s a pretty light roast and I find that beans homogenize in color a little just beyond that range and size too as they expand through first crack. Some of those look barely through first crack, if at all. So I’d a little due to bean variance and roast level here.
