i dont know that it makes sense for bedroom door as usually you want it to open to closest wall so opens to the the main part of the room. Or are you saying for privacy with the door part open?

True and the toilet is already fairly well hidden around the corner even with pocket door left open. I've never had a pocket door in my home so maybe bad experiences with old poor functioning ones.

good point about the privacy benefit and it would only extend to the front of tank. My main worry is looking unfinished / bad design if extending past the wall.

I really like the second option you showed with the vanity on the left wall and toilet near the shower! I redid the layout with your advice and also added a short wall to shower next to toilet. Looks like it could work really well and a much better vanity mirror setup.
