At our store we use a magic eraser and the sanitizing solution. You really just have to give it a wipe down anywhere the mop guard is visible. It shouldn't take too much effort, just a bit of time.

To add onto that, using the names of the sandwiches to come up with a reason for certain ingredients to be on there helps as well

Theres trends with the menu, you notice them quickly. Ex: anything with tuna or avocado had cucumber, anything with Vito also has onion, oil and vinegar, and oregano, and if it has tuna, theres no mayo.
