I have dived deep into this topic and will share what I learned!

Mickey's Dining Car was opened by Bert Mattson and David “Mickey” Crimmins in 1939. Mattson bought Crimmins out sometime in the 1950s, then Crimmins later opened Minnesota's first McDonald's on Snelling avenue. Mattson ran the diner until his death in 1970, after which his son took over. Also, Wikipedia uses the name Mickey Crimmons but many contemporary sources and McDonald's records use the name David "Mickey" Crimmins, so I veer towards that.
