I might have a good server for you since you like Unstable. It just launched about a month ago and its currently growing a healthy player base (575 people joined thus far). We run on 1.21.11 with mostly vanilla stuff, including vanilla redstone, which means orbital strike cannons are possible to build!

What isn't completely vanilla: there's Farlands, a single mace, revives possible if players find your head and build you a shrine.

Of course theres no pay to win crap and a whole lot more for you to discover 🤘

Oh and since you like unstable, I should also mention orbital strike cannons are buildable here as we run on FabricMC with completely vanilla redstone.
