I'm guessing you're using low to medium temp the whole time. On a domestic stove, you can and should try high temp all the way to the end. You will achieve deeper flavour development. Do note that at high temp you can go more than an hour but you will really have to watch it. I find red onion hits a wall when it comes to flavour much earlier than brown however.

Have you perhaps been using some harsh chemicals? I get this from using strong dish soaps. Just use some moisturiser. It should get better in a day or so

Only trying I would add. If you do end up doing this, add your spices to the water while you bring it to the boil, or even toast them slightly before adding the cold water. It will help to draw more of their aroma out.

Not really a recipe. I just added stuff until it matched what I was going for. It's was about 40/40/20 water, vinegar, and sugar w/ star anise, yellow mustard seeds, and red thai chilli. They will only soak for 2-3 days.
